A great trick to saving money is finding ways to eat less meat.
This super cheap Mexican recipe requires no meat, only a few minor ingredients and can be frozen for future defrosting to help you save time.
Most of the ingredients (except the cheese) can be stored in the cupboard. This makes it an ideal backup recipe for those last minute rushes. Alternatively, burritos are a great dinner to freeze for single serve defrosting (think when you are home alone, etc).
Oh and the health benefits of eating less meat are substantial. Consider other vegetarian options to cut down on how much meat you buy; you will feel healthier and save a bomb of money.
Recipe: Mexican Bean & Cheese Burritos
Serving size: Makes 24 burritos (halve the recipe to make 12)
- 4 can of refried beans
- 1 jar of Mexican salsa
- 1 packet of Taco seasoning
- 350g of grated cheese (cheddar, to taste)
- 24 medium sized Mexican flour tortillas
How to make Bean & Cheese Burritos:
Using a large bowl, mix the refried beans, Mexican salsa and taco seasoning together
Apply 2-3 teaspoons (or to desired amount) onto centre of the flour tortilla (I tend to start a production line and make them all at once).
Add grated cheese on-top of mixture and roll up into a burrito (fold left to right, bottom to centre, right to left to enclose).
Now place the desired quantity of burritos into a ziplock glad bag ready for freezing. I tend to do lots of 2, 4 and 6 as that makes it easier when I am on my own or have people with me.
Heating your burritos:
Microwave: Remove from freezer, place 1-3 burritos on a plate and cook on high for 2-3 minute checking in-between.
Conventional oven: Remove from freezer, allow to thaw for a few hours and bake at 180 degrees for 30 minutes until completely heated throughout.
Feel free to add extra grated cheese and for those really wanting to spice it up; add sour cream and jalapeños.
